Grape varieties: Syrah, Cabernet Sauvignon
Yield: 30hl/ha
Harvest: Hand-picked in 30kg crates, sorted in the vineyard and on a sorting table in the cellar.
Vinification: De-stemming, pumping over twice a day, temperature-controlled fermentation, light maceration under marc after alcoholic fermentation, malolactic fermentation after devatting, partly matured in French oak barrels.
To the eye: brilliant garnet-red color, deep and intense with purplish highlights.
On the nose: Powerful and elegant, this wine reveals intense aromas of black fruits such as blackberry, blackcurrant and wild blueberry, enhanced by spicy touches of garrigue. Then subtle notes of aging appear: toasty, toasted notes. Full-bodied, tender and velvety on the palate. The beautifully textured tannins are fully expressed, then in retro-olfaction, we find black fruit aromas subtly mixed with black pepper and sweet spices, typical of Syrah.
Cellaring potential: 8 to 10 years.
Food pairing: Sisteron lamb with pepper and savory-infused jus, peppers stuffed with spiced vegetables.
