Description
Grape varieties: Rolle, Semillon
Yield: 30hl/ha
Harvest: Hand-picked in 30kg crates, sorted in the vineyard and on a sorting table in the cellar.
Vinification: Low-temperature fermentation, partly in stainless steel and partly in barrels, light fining, then clarification by natural sedimentation.
Tasted in September 2022 with our oenologists: Beautiful pale yellow color with subtle silver highlights. Intense, complex nose, with exotic, fresh almond and yellow peach notes.
Palate: Ample and suave, the palate reveals pleasant toasty and vanilla notes, while retaining a fine balance with delicate freshness. Superb length with apricot and dried fruit aromas.
Cellaring potential: drink now and cellar for another 4-5 years.
Food/wine pairing: Scallop tartare, Goat’s cheese, Bruschetta with eggplant and pesto.
