Terroir: Clay-limestone
Grape varieties: Syrah 95%, Cabernet-Sauvignon 5%.
Yield: 30 hl/ha
Harvest: Hand-picked in 25 kg crates, sorted in the vineyard and on a sorting table in the cellar.
Vinification: Destemming, fermentation in temperature-controlled concrete vats, light maceration under marc after alcoholic fermentation, malolactic fermentation after devatting. Aged in 400L demi-muid barrels
Tasting notes: Bright, limpid garnet-red with bigarreau hues. Powerful and complex, this wine reveals fruity (blackberries, wild strawberries), floral (peony) and spicy (white pepper, juniper berries) notes, enhanced by subtle toasty notes due to ageing. The tannins are powerful but perfectly integrated, giving this wine a sapid, elegant character. The finish is long and mellow, revealing hints of black fruit, coupled with a noble woodiness.
Cellaring potential: 10 to 15 years
Food pairing: Beef Wellington with black truffle, Hare à la Royale.
